Creamy Buttermilk Popsicles That Taste Like Cheesecake

These delicious 4-ingredient buttermilk popsicles are creamy, sweet, tart, and taste just like cheesecake on a stick! 

When I first tasted a buttermilk popsicle at Steel City Pops in Birmingham, it was love at first bite. (While Steel City Pops is no longer in business, you can still find these at Sons Pops, which is owned by the same family that created Steel City Pops). However, you can make identical-tasting gourmet popsicles right in your own home!

While this may seem like an unlikely flavor, one taste will have you hooked as well! These frozen treats have a rich cheesecake flavor and are so refreshing, especially on a hot summer day.

A Simple Crowd Pleaser

With just four ingredients and minimal prep, these buttermilk pops are my favorite kind of summer dessert. Unlike other homemade popsicle recipes, this one does not require you to pull out the blender or food processor. While this dessert is wildly simple, it is also addictive!

What do Buttermilk Popsicles Taste Like? 

If the thought of sour buttermilk doesn’t sound appetizing to you, I promise these are worth a try! The tart, creamy buttermilk perfectly balances out the rich heavy cream and sweet sugar and is complemented by the vanilla bean. These taste exactly like cheesecake and are a lighter way to indulge if that is your favorite dessert. Kids and adults love these pops, and they are perfect for a summer cookout or Fourth of July party!

Can I Make Gourmet Popsicles at Home? 

Making gourmet popsicles at home is super easy. Once you invest in the ice pop molds and sticks, all you have to do is keep ingredients on hand to make pops any time. I make several batches to stock the freezer and just add to the stash when I run low! Once you buy the pop molds, the flavor possibilities are endless! Chocolate, strawberry, and coconut are all delicious flavors! You can make juice pops, yogurt pops, or creamy pops like these. You could also add in berries, lemon juice, or fresh peaches to the buttermilk base! 

What Ingredients are in this Recipe? 

Does it get any easier than this?! To make these delicious buttermilk pops you only need four ingredients (five, if you count salt). 

  • 2 cups buttermilk (I use Friendship 1% fat.)
  • 1 cup organic heavy cream
  • 2 cups simple syrup- You can buy simple syrup in the store or make it at home. Also, having a little water in these pops helps the texture and allows them to freeze easier.
  • 1 vanilla bean, scraped or 1 Tbsp of vanilla bean paste
  • Dash of kosher salt (about 1/2 tsp) 

How do I Make these Buttermilk Popsicles? 

To make this recipe, start by making your simple syrup. Boil 2 cups of water, 2 cups of sugar, and a vanilla bean for one minute. Let this cool and then set it aside in a small bowl or store in the fridge in a glass jar. In a medium bowl, mix together your buttermilk, cream, simple syrup, and salt. Pour this mixture into the popsicle molds and let the pops freeze for at least five hours. Enjoy!

Ingredients

  • 2 cups buttermilk
  • 1 cup organic heavy cream
  • 2 cups simple syrup
  • 1 vanilla bean, scraped or 1 Tbsp of vanilla bean paste
  • Dash of kosher salt

Instructions

  1. Make simple syrup by boiling 2 cups water, 2 cups cane sugar, and a vanilla bean for one minute.
  2. Let cool. (Syrup can be made hours or days ahead and kept in fridge.)
  3. Mix buttermilk, simple syrup, heavy cream, and salt. Stir well.
  4. Pour mixture into popsicle molds. Freeze as directed (at least 5 hours).
