4-Ingredient Frozen Strawberry Cheesecake Dessert
This Frozen Strawberry Cheesecake Dessert is the definition of a crowd-pleaser! Similar to an “icebox cake,” this no-bake dessert could not be easier to make.
Many of us grew up enjoying different variations of “icebox cake,” which is an old-fashioned dessert made up of layered ingredients that is set up in a baking dish or pie plate in the refrigerator or freezer. This delicious strawberry dessert is perfect for the beach, summertime BBQs, birthday parties, and more!

An Easy Spin on Dessert:
I love making these desserts when I host because they can be made ahead of time and easily feed a crowd! Some no-bake strawberry cheesecake recipes require you to pull out a mixing bowl, hand mixer, or even a food processor. This frozen, no-bake strawberry delight comes together in one dish. It’s less about “cooking,” and more about assembling ingredients in the pan.
What Ingredients Are in This Recipe?
Sometimes the simplest recipes end up being my favorite ones to make and serve! This fabulous dessert comes together with just four ingredients:
- Blonde ice cream sandwiches – I love the “Fat Boy” blonde ice cream sandwiches, but you can also use Mayfield. The blonde ice cream sandwich mimics the graham cracker crust you would find in a cheesecake.
- 1/2 gallon of strawberry cheesecake ice cream – I found strawberry cheesecake ice cream at my grocery store, but in a pinch, you could also use regular strawberry ice cream.
- 12 oz. Cool Whip
- 2 packages of Tru Fru white chocolate-covered strawberries – These are such a pretty topper and add the most delicious strawberry flavor! If you can’t find the strawberry version, you could also use the white chocolate-covered raspberry Tru Frus.
A True Crowd-Pleaser:
I recently made this for my small group, and it was a roaring success! Everyone was raving over the layers of strawberry goodness, and it was a fun twist on a classic cheesecake. This simple dessert tastes like a cross between strawberry cheesecake and ice cream cake. It is very sweet, so a little goes a long way!
How Do I Make This Frozen Strawberry Cheesecake Recipe?
You can make this dessert several days before you want to serve it because it is stored in the freezer! The day before you make it, put your Cool Whip in the refrigerator so it will be spreadable. Two hours before you are ready to assemble the dessert, pull the ice cream out of the freezer and leave it at room temperature to melt. Start by lining your baking pan with the ice cream sandwiches, then spread the strawberry cheesecake ice cream on top using a spatula. Put this back in the freezer while you stir up your Cool Whip and prepare to spread it. Then, layer on the Cool Whip and place the dish in the freezer. Next, put the Tru Fru in a plastic bag and crush them using a mallet. Sprinkle the crushed berries on top of the dessert and cover the whole dish in plastic wrap to chill in the freezer until you’re ready to serve.

How Should I Serve This Frozen Strawberry Cheesecake Dessert?
About 20 minutes before you’re ready to serve, pull the dessert out of the freezer so it can thaw slightly. Using a serrated knife, cut slices and serve as is or garnish with more Cool Whip or whipped cream and fresh strawberries!

Ingredients
- Blonde ice cream sandwiches - enough to cover the bottom of a casserole dish
- 1/2 gallon of strawberry cheesecake ice cream
- 12 oz Cool Whip
- 2 packages of Tru Fru white chocolate-covered strawberries
Instructions
1. The day before making this recipe, put your Cool Whip in the refrigerator to thaw.
2. Two hours before you are ready to assemble, pull the ice cream out of the freezer and leave it at room temperature to melt.
3. Line your baking pan with the ice cream sandwiches. Then, spread the strawberry cheesecake ice cream on top using a spatula.
