Back-to-school season is notoriously busy, but it doesn’t have to mean night after night of takeout and frozen pizza. This one-pan Mozzarella & Pepperoni Chicken Bake turns just five simple ingredients and a few seasonings into a cheesy, hearty dinner the whole family will love! Ditch the fancy prep and complicated steps. Just layer, bake, and serve!

Mozzarella & Pepperoni Chicken Bake is a hearty, cheesy chicken bake layered in one pan with savory pizza sauce, mushrooms, pepperoni, and mozzarella. It’s like pizza night but without the crust! 

What’s the Best Cheese for this Recipe?

Mozzarella is my favorite choice for that stretchy, pizza-like melt. However, provolone, Monterey Jack, or an Italian blend also work well! 

How Long Should I Bake Chicken Breasts at 400°F?

Generally, boneless skinless chicken breasts take 30–35 minutes at 400°F, depending on thickness. Always use a meat thermometer to ensure they reach 165°F for safe eating.

What Ingredients are in Mozzarella & Pepperoni Chicken Bake? 

With just five ingredients and a few seasonings you probably already have on hand, this “pizza chicken bake” comes together in no time! Feel free to add any additional toppings you like on your pizza, like sausage, bell pepper, onions, or black olives. To make this dish you simply need:

  • 2 chicken breasts (pound thin or butterfly)
  • Salt, pepper, garlic powder, Italian seasoning
  • 1 jar of marinara sauce or pizza sauce- I love Mezzetta pizza sauce.
  • 1 small carton sliced mushrooms
  • 1 bag pepperoni slices- I used the mini sizes.
  • 6 mozzarella slices

How Do I Make This Recipe? 

Lay the chicken breasts in a baking dish or casserole dish and season generously with salt, pepper, garlic powder, and Italian seasoning to taste. Pour the pizza sauce or spaghetti sauce over the chicken, and top with the slices of mozzarella cheese. You can even sprinkle a handful of Parmesan cheese over the top for a little extra punch!

Bake this dish in a preheated oven at 400°F for 30-35 minutes or until internal temp of chicken reaches 165°F. Allow the chicken to rest for 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for several days.  Remember: leftovers make a fabulous lunch!

Instructions

  1. I’m looking forward to making this. When/where do the mushrooms and pepperoni fit into this recipe. They are not mentioned in the instructions.

  2. This looks easy, but most importantly, it looks delicious. I’ve got all the ingredients in my kitchen now so I’m looking forward to making it. When reading your recipe I notice that you have not given directions as to when to add the pepperoni. I’m assuming it goes on after the salt and pepper but before the marinara. Is this correct?
