With back to school just around the corner, I thought it was the perfect time to share my favorite recipes for easy weeknight dinners! These healthy, crowd-pleasing meals are perfect for family dinners and even make delicious leftovers to send in your child’s lunch box the next day. In my opinion, the perfect weeknight meal is simple and quick to make, a good source of protein, and delicious. Each of these recipes fits the bill!

My family has adored these mini meatloaves for years! This is Mitt Romney’s favorite meatloaf recipe, and the sweet and tangy glaze absolutely makes this dish. Save the leftovers for meatloaf sandwiches the next day. Our favorite sides to go with this meatloaf include this Four Cheese Mashed Potato Bake and Mississippi Green Beans.

This easy, super delicious white bean chicken chili in a slow cooker is one of the BEST chicken dishes you’ll ever put in your mouth. With only 5 minutes of prep time and 4 ingredients, it truly doesn’t get easier for a weeknight dinner!
Baked Potatoes
In my opinion, the perfect baked potato is one that is delicious right down to the skin. These baked potatoes with crispy, garlicky skins are the perfect side dish for proteins like salmon, chicken, or steak. They’re also just as satisfying when piled high with toppings and served as a hearty main dish.
