While I have so many casseroles I love to make, these are hands-down my top twelve recipes I find myself making time and time again. You can’t talk about Southern casseroles without mentioning poppy seed chicken! I love to make this for new moms or anytime I take a meal to someone. It requires hardly any prep time, and you can make it even quicker by using rotisserie chicken. Between the crunchy, buttery Ritz cracker topping and creamy filling, this is truly the ultimate comfort food! This one also freezes beautifully.

French Onion Squash Casserole

This is a fun twist on a classic squash casserole that uses French onion dip instead of mayo or cream cheese. You can prep this one a few days ahead of time and store it in the refrigerator until you’re ready to bake! Just be sure to make the crumb topping right before baking so it stays crispy. 

Sausage & Gruyere Grits Casserole

One of my favorite make-ahead breakfast dishes is this sausage and Gruyere grits dish! The flavor is so delicious and savory, and it requires minimal ingredients and hardly any prep time. You can store this in the fridge or freezer and pull the pan out when you’re ready to serve. I love to serve this with biscuits and fruit for a full gourmet breakfast!

If you combined my summer squash casserole and poppyseed chicken, you’d get this delicious poppyseed squash casserole! It’s perfect for making ahead and freezing and is sure to be a hit. While a vegetable dish is typically a side, this dish will be the main attraction at any gathering. The savory three-cheese filling and crispy poppyseed topping are a winning combo every time!
