I love using steamed cauliflower as a base for low-carb side dishes, but this one with Boursin cheese might be my very favorite! This recipe is rich, creamy, and tastes just as decadent as mashed potatoes. With only five ingredients and minimal prep time, it is simple enough for a weeknight dinner yet elevated enough to serve to company. 


A Low-Carb Swap

Cauliflower has become very popular in recent years as a low-carb side dish. There are many benefits to the versatile vegetable—it’s high in fiber, Vitamin C, K, B6, folate, potassium, and magnesium. In this recipe, steamed cauliflower makes for a great substitute for mashed potatoes.

If you have picky eaters in your house or struggle to get enough veggies yourself, this recipe is perfect for you! It has the same flavor as mashed potatoes but the health benefits of a vegetable. What Is Boursin Cheese?  

Boursin cheese is a delicious, mild, creamy cheese that you can find in almost any grocery store. It is a cross between goat cheese and cream cheese and has delicious herbs like garlic, chives, and parsley. It is the star of this recipe! 

What Ingredients Are In Boursin Cauliflower Mash? 

  • 1 head of steamed cauliflower or steamed cauliflower florets
  • 1 package of Boursin cheese
  • 1/2 cup melted butter
  • 1/2 cup milk or heavy cream 
  • Parmesan cheese to top 
  • Salt and black pepper to taste 


How Do I Make This Recipe?

Start by steaming your cauliflower and draining off any excess water. Add your steamed cauliflower to a large pot, and add a package of Boursin cheese, a stick of melted butter, and your milk. Use a hand mixer or immersion blender to combine all the ingredients until your cauliflower mash is smooth. Grate fresh Parmesan over the top, and stir to combine. Serve immediately as you would mashed potatoes, or spoon the mixture into a baking dish and top with more of your favorite cheese. Bake this in the oven until it is warmed through and the cheese is bubbling. Garnish with fresh parsley or extra cheese, and enjoy! Store any leftovers in the fridge in an airtight container for up to four days and microwave them when you’re ready to serve.

Ingredients

  • 1 head of steamed cauliflower or steamed cauliflower florets
  • 1 package of Boursin cheese
  • 1/2 cup melted butter
  • 1/2 cup of milk or heavy cream

Instructions

    1. Steam a head of cauliflower and drain off any excess water.

    2. To the pot, add a package of Boursin cheese, a stick of melted butter, and your milk.

    3. Using a hand mixer or immersion blender, combine all the ingredients until smooth.

    4. Grate fresh Parmesan over the top, and stir to combine.

    5. Serve immediately or spoon the mixture into a baking dish and top with more of your favorite cheese. Bake this in the oven until it is warmed through and the cheese is bubbling.
