This crowd pleasing Greek chopped slaw comes together in less than 10 minutes, costs less than most salads, and stays crisp for hours. The perfect party salad!

Salad can be expensive; this one is not!

Having cooked for our small group (20+ people) for years, my friend Debra and I have mastered the art of quick and easy salads that dont break the bank. Although we love the salads with fruit, glazed nuts, artisan lettuces, and gourmet cheeses, those are not always in the budget. Thus……this easy, budget friendly slaw was born!!

Greek chopped slaw comes together quickly.

I made this for our small group last week, and it took a total of 10 minutes! If you keep basic vinaigrette ingredients on hand, you can buy a couple heads of cabbage, tomatoes and feta to whip this up for a gathering. If you are like me, you probably have all the ingredients on hand minus the cabbage:-)

This slaw stays crunchy for hours, unlike salads with delicate lettuces that begin wilting soon after adding dressing. Cabbage, cucumber and tomatoes are hefty and can withstand dressing and maintain crunch for those who (like me) want to have a bowl of slaw at the end of the party!

Serve this in a large disposable container.

Since this slaw is most often served at casual, larger gatherings, I suggest getting an extra large aluminum pan for serving and easy cleanup. I get my pans at dollar stores, and I get extra large for this slaw. Of course you CAN serve this in a lovely dish for more formal events.

Ingredients

  • Slaw:
  • 2 heads green cabbage, sliced and chopped into bite size pieces
  • 1 English cucumber, diced
  • 1 cup sliced cherry tomatoes (add more if needed)
  • 1 cup feta cheese
  • Vinaigrette:
  • 1 cup EVOO
  • 3/4 cup red wine vinegar
  • 1 TB Dijon mustard
  • 1 TB Greek seasoning (I love Daks)
  • Freshly ground pepper

Instructions

  1. Place chopped cabbage into large bowl (or aluminum disposable pan).
  2. Add tomatoes.
  3. Make vinaigrette; massage into salad.
  4. Add feta; massage again.
  5. Finish with freshly ground pepper.

  1. In the video it shows you squeezing lemons into the vinaigrette, but lemon juice is not in recipe. Did you substitute lemons for red wine vinegar? Thanks…
