These Strawberry White Chocolate Chip Cookies are a crowd-pleasing hit that are made with only four ingredients!

Soft, chewy, and bursting with strawberry flavor, these Strawberry White Chocolate Chip Cookies are the perfect pink treat for any occasion. Made with strawberry cake mix and creamy white chocolate chips, they’re quick to whip up, freezer-friendly, and absolutely irresistible.

Cake Mix Cookies 

Did you know you can make cookies with a cake mix? I love doctoring up a cake mix to make cakes, brownies, and even cookies! By adjusting the ratio of oil and eggs as well as the bake time, you can turn a cake mix into cookie dough rather than cake batter! I love using a cake mix because it saves you the time spent measuring out dry ingredients like flour, white or brown sugar, salt, baking soda, and vanilla. Add in the white chocolate chips and you have the perfect strawberries and cream flavor combination!

The Quickest Cookies You’ll Ever Make

These strawberry white chocolate chip cookies only take one bowl, four ingredients, and five minutes of prep time! If you’ve ever tried my famous strawberry brownies, these cookies are very similar but with a chewy cookie texture. You can try different flavor combinations with the cake mix, but strawberry is my favorite cookie to make this way!

What Ingredients Are In This Recipe? 

There are only four ingredients in this recipe! To make these cookies you need:

  • 5 TB butter, melted
  • 2 large eggs
  • 1 (15 oz) box strawberry cake mix (I love Duncan Hines.)
  • 1/2 cup white chocolate chips or white chocolate chunks (I love Lily’s white chocolate chips. They are a great no-sugar-added option and are sweetened with stevia and erythritol.)
  • Optional: You could also use shredded coconut or macadamia nuts for more delicious add-ins.

How Do I Make These Cookies?

Start by preheating your oven to 375°F and lining a baking sheet with parchment paper. In a medium bowl, combine your butter, eggs, and cake mix. Use a hand mixer to mix until the cookie dough is thoroughly combined, but be careful not to over mix. Next, fold in your white chocolate chips. Then, roll your dough into 1″ balls and space them 2″ apart. Bake for 8-10 minutes, or until the edges start to become golden and the cookies puff up. Enjoy!

Ingredients

  • 5 TB butter, melted
  • 2 large eggs
  • 1 (15 oz) box strawberry cake mix
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. Line cookie sheet(s) with parchment paper.
  3. In medium bowl, combine butter, eggs, and cake mix. Mix until well incorporated and smooth.
  4. Stir in white chocolate chips.
  5. Roll dough into 1" balls; arrange 2" apart on cookie sheet.
  6. Bake 8-10 minutes until puffed and beginning to brown at edges.
  7. Cool & store in an airtight container.
