If you’re a fan of my strawberry brownies, you will love my lemon brownies! They are bright, moist, and made from a cake mix for easy assembly. Topped with a fresh lemon juice glaze, these are perfect for spring and summertime! 

Calling all lemon lovers! Lemon desserts are perfect for spring and summer months, and I love making these for showers, Easter, or any warm weather get-together. With just three ingredients for the brownies and two ingredients for the lemon glaze, it doesn’t get any easier than this!

The Best Lemon Brownies

These lemon brownies are one of my favorite spring sweets! Because they’re made from a cake mix, this will be the easiest brownie recipe you’ll ever make. Like my original recipe for strawberry brownies, these cake mix brownies have the same thick texture as traditional brownies. They travel beautifully and look so pretty served on a platter or dessert tray!

Can I Really Make Brownies With a Cake Mix? 

In short, yes you can! By using a different ratio of eggs and oil and omitting the liquid, you can turn any cake mix into a brownie. Unlike lemon bars, which are more gelatinous, these have the same dense, chewy texture as your favorite chocolate brownies.

What Ingredients are in This Recipe?

I love how simple this recipe is! By using the boxed cake mix as your base, you will save so much prep time. The brownies are made with just three ingredients and the delicious lemon glaze with only two

Brownies
  • 1 box lemon cake mix (I love Duncan Hines!)
  • 2 eggs
  • 1/2 tsp lemon extract (optional)
  • 1/3 cup oil
Glaze
  • 1 cup powdered sugar
  • 1-2 TB fresh lemon juice – Add this slowly until your glaze reaches the desired consistency.
  • lemon zest – This is optional, but it’s great if you want an extra “punch” of lemon flavor.

How Do I Make These Lemon Brownies? 

To start, preheat your oven to 350°F. Line an 8-inch baking pan with parchment paper and spray it with cooking spray. In a large mixing bowl, mix together your cake mix, eggs, oil, and lemon extract with a mixer until it is well combined. Pour the batter into your lined pan, and spread it evenly. Put the brownies into the preheated oven and bake them for 15 minutes, or until they have just begun to set. You can check the edges with a toothpick, but the middle should be not quite set yet. Allow the brownies to cool, and start on the glaze. Mix together your lemon juice and powdered sugar until it’s smooth. Then, spread the lemon glaze on top of the brownies. Serve immediately and store leftovers in an airtight container or Ziploc bag. Enjoy!

Lemon brownies can be made ahead and frozen in a Ziploc freezer bag for up to three weeks. Simply thaw them at room temperature an hour or more before serving, and enjoy!

Ingredients

  • BROWNIES:
  • 1 box lemon cake mix
  • 2 eggs
  • 1/2 tsp lemon extract (optional)
  • 1/3 cup oil
  • GLAZE:
  • 1 cup powdered sugar
  • 1-2 TB fresh lemon juice (to desired consistency)

Instructions

  1. Preheat oven to 350 degrees.
  2. Line an 8" square baking pan with parchment paper. Spray with cooking spray.
  3. Mix cake mix, eggs, oil and extract with a mixer until well combined.
  4. Spread batter evenly into pan.
  5. Bake for 15 minutes or until brownies just begin to set, being careful not to overcook.
  6. When done, allow brownies to cool before lifting from pan with parchment paper
  7. Set brownies aside to cool.
  8. Mix lemon juice and powdered sugar until smooth.
  9. Spread lemon glaze on top of brownies.
