Healthy Spins on Two Taco Bell Favorites!

 These two delicious recipes are a lighter, healthier spin on two popular Taco Bell recipes! If you are trying to cut back on fast food but still satisfy your cravings, these are perfect for you! 

These two recipes are inspired by two popular but discontinued Taco Bell menu items. I have always LOVED their “Pintos and Cheese,” so I was so upset when I found out it was no longer available. When I posted my “copycat recipe” on Instagram, many of you also requested I remake the “Enchirito.” Even if you aren’t a Taco Bell fan, I promise you will love these delicious recipes! They are quick and easy weeknight (or anytime!) meals you can feel good about! 

A Healthier Spin on Taco Bell Classics:

While I love the ease of a drive-thru as much as the next person, I also love easy recipes that help me reach my health goals! My version of these menu items are high protein, high fiber, lower in calorie, full of flavor, and made of whole food ingredients. Dare I say they taste even better than the original! 

What Are the Taco Bell Pintos And Cheese?

“Pintos and Cheese” is a creamy, cheesy bean dip! It resembles a more simplified version of a “seven layer” dip. It is so simple, and usually comes served with tortilla chips! I love it as a dip with chips or veggies, like sliced peppers, cucumbers, or carrots! This makes a FAB dip for tailgates, super bowl parties, or an easy lunch or dinner!

What Ingredients Are In This Dish?

Pintos and Cheese is such a simple dish and requires only three ingredients! All the ingredients are also very inexpensive, so this is a fab budget-friendly dish! To make it you need the following:

  • 1 can of refried beans (I love Siete’s!)
  • 1 jar or can of red enchilada sauce
  • 1-2 cups of cheddar or Monterey Jack cheese

How Do I Make Pintos and Cheese?

Not only does this dish only require three ingredients, but it comes together in five minutes or less! Start by putting your refried beans and enchilada sauce into a bowl, and mix it together with an electric mixer. Next, put this mixture into a dish and top it off with the cheese. You can bake this in the oven at 375 until the cheese is bubbling, or put it in the microwave for a few minutes until the cheese melts! 

What Is The Taco Bell Enchirito?

The Enchirito is a discontinued Taco Bell menu item that was extremely popular! It is a combination of an enchilada and a burrito. It is a flour tortilla that is filled with ground beef, black beans, onions, and is topped with enchilada red sauce, black olives, and cheese! 

What Ingredients Are In The Enchirito?

Something I love about this recipe is that it is so easily customizable! There are a few staple ingredients, but the rest can be your favorite taco toppings or burrito fillings. In my “Enchirito” I use the following ingredients:

  • Meal prepped taco meat.
  • Low-carb flour tortillas
  • Refried beans (or black beans)
  • Enchilada sauce
  • Shredded cheese
  • Fresh pico (I absolutely love the one from Sprouts!) or your favorite salsa
  • Black olives 

How Do I Make My Taco Meat? 

Having taco meat prepped and in my fridge makes this a 5 minute recipe! Simply having taco meat on hand has been a game changer for helping me reach my protein and health goals in the midst of a busy week! I brown ground beef, ground turkey, or ground chicken in a skillet over medium heat. I like to add taco seasoning if I have it on hand, or a “homemade taco seasoning” made of salt, pepper, garlic powder, onion powder, cumin, chili powder, and paprika! I drain any excess grease from the pan and store the ground beef mixture in an airtight Tupperware container! 

How Do I Make This Recipe? 

To make the Enchirito, start by putting your taco meat and refried beans into a low-carb flour tortilla or corn tortilla. Roll this into a burrito shape and pour enchilada sauce over it. Top with shredded cheese and air fry at 350 degrees for 5 minutes! I top mine with fresh pico and black olives, but you could add sour cream, lettuce, avocado, or tomatoes- whatever you like! 

Pintos and Cheese

Ingredients

  • 1 can of refried beans (I love Siete’s!)

Enchirito

Ingredients

  • 1 cup meal prepped taco meat
  • 4 low-carb flour tortillas
  • 1/2 cup refried beans (or black beans)
  • 1/2 cup enchilada sauce
  • 1 cup Shredded cheese
  • Fresh pico (I absolutely love the one from Sprouts!) or your favorite salsa to taste
  • Black olives
